Peanut Butter Cup Cookies



Peanut butter and chocolate were meant to go together, and that's all there is to it.  Instead of making the traditional peanut butter cookies with the Hershey's kiss on top, we made the same dough but pressed a Reese's cup in the center of the dough before baking.  We think these are definitely the better version of the two!

Peanut Butter Cup Cookies
1 1/2 cups flour
3/4 tsp baking soda
1/2 tsp salt
1/2 cup unsalted butter, slightly softened
1 cup peanut butter
1 cup sugar
1 egg
2 tsp vanilla
1 bag of Reese's peanut butter cups

Preheat oven to 350 degrees.  Place bag of Reese's peanut butter cups in freezer until ready to use (this allows the wrappers to come off clean).  Sift flour, baking soda, and salt with a wire whisk and set aside.  Beat butter and peanut butter.  Add sugar and beat until fluffy.  Add egg and vanilla.  Add flour mixture and combine.  Roll dough into 1 to 1-1/2 inch balls and then roll the balls in granulated sugar to coat.

Press rolled balls into greased cavities of a mini muffin tin.  Press an unwrapped Reese's peanut butter cup into each. Bake at 350 degrees for 8-10 minutes.  Let cool in pans for 5-10 minutes.  Remove from pans and allow to finish cooling in wire racks.  Makes 2-3 dozen cookies.

Peanut Butter Snickers Cookies

I have this weird thing where I like knowing people's favorites.  Probably because I have a favorite everything (soda, ice cream, pair of jeans, month, cushion on the couch) so I assume others do too.  I learned shortly after Caleb and I started dating that HE HAS NO FAVORITES.  This drives me crazy!  We finally figured out Caleb has one favorite.  Snickers bars are his favorite candy bar.  That is it.  I have one favorite of my husband's to work with.  So when I found this recipe, I just had to make these cookies.  After a couple of rough days at work last week, I wanted to have these coming out of the oven as Caleb got home from work.  Those with a peanut allergy stay away - there's Snickers AND peanut butter!


Peanut Butter Snickers Cookies
1 1/4 cups flour
3/4 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1/2 cup unsalted butter, softened
1 cup creamy peanut butter
3/4 cup sugar
1/2 cup light brown sugar, packed
1 egg
1 Tbsp milk
1 tsp vanilla extract
4 regular-sized Snickers bars, chopped
3/4 cup chocolate chips (semi-sweet or milk)

In medium bowl, whisk together the flour, baking soda, baking powder, and salt.  Set aside.

In the bowl of a stand mixer, beat the butter and the peanut butter together until fluffy.  Add the sugars and beat until smooth.  Add the egg and mix until combined.  Add the milk and the vanilla extract and mix again.  Add the flour mixture and beat until flour disappears.  Stir in the chopped Snickers bars and chocolate chips.

Drop by heaping tablespoons onto baking sheets lined with parchment paper.  Gently flatten each cookie ball with the palm of your hand.  Bake at 350 degrees for 10-11 minutes, or until cookies are slightly brown on the edges.

Cool the cookies on the baking sheets for 5-10 minutes, then remove to a rack to cool completely.  Store in airtight container at room temperature.

Peanut Butter Chocolate Chip Muffins

Last week I decided I needed to make some muffins.  We had had scones or banana bread for the past couple of weeks, but I needed muffins again.  I had bookmarked this recipe a little while ago and realized I had all of the ingredients on hand!  I love recipes like that - just simple, basic ingredients so you can whip it up whenever you have the craving.  I was a little nervous that when I ate one of these I would have that guilty-because-I-feel-like-I-just-ate-dessert-for-breakfast feeling.  But I didn't.  Of course the chocolate chips add sweetness, but I didn't think the actual muffin was too sweet for breakfast.  Caleb said I definitely needed to add these to my permanent recipes.  I try so many recipes that I get from all over the place, but if it's something I know I will want to make again and again, it gets permanent residence in the book.  Enjoy!


Peanut Butter Chocolate Chip Muffins
2 1/4 cups flour
2 tsp baking powder
1/2 tsp salt
2/3 cup packed brown sugar
6 Tbsp butter, melted and cooled
1/2 cup peanut butter
2 eggs
1 cup milk
3/4 cup chocolate chips

In medium bowl, whisk together the flour, baking powder, salt, and brown sugar.  Set aside.

In large bowl, whisk together the melted butter, peanut butter, eggs and milk until smooth.  Add in the flour mixture and stir just until combined.  Stir in chocolate chips.  Divide batter evenly among paper-lined muffin tins (or get some silicone baking cups - they're the best!) and fill to almost the top.  Bake at 375 degrees for 17-20 minutes, or until toothpick comes out clean.  Allow to cool in pan for 5 minutes, then remove to wire rack to cool completely.  Store at room temperature in airtight container.
