One Ingredient Ice Cream

It's still summer.  And there has been a crazy heat wave across this country.  If you are in need a cold treat, say no to that pint of Ben & Jerry's Half Baked.  Try this much healthier-for-you treat instead!


Yes, it looks like ice cream.  It is creamy ice cream.  But it's made with a banana!  That's it!  This is seriously the most ridiculous thing ever.  Here's what you do:

1. Slice a banana and place slices on a plate.
2. Freeze for 1-2 hours.
3. Place frozen banana slices in a food processor.
4. Blend on high.  Watch as a miraculous transformation takes place.
5. It starts as crumbs of frozen banana.  You'll probably have to scrape down the sides as you go.
6. Suddenly, the texture will become creamy.  Make sure you cream out all those banana crumbs. 
7. If you like, add in some mix-ins.  I used a spoonful of all-natural peanut butter.  I also think chopped nuts or flaked coconut would be good.

A banana into ice cream.  Who knew?!  Happy Monday!

  2. I make this all the time!! We discovered a shop when I was 10 and became allergic to dairy that made these using a very fancy juicer - and now we make it with our stick blender!

  3. holy moly!!!! i can do this in my little nyc kitchen no prob. i see adding in pb and nutella in my future. (also, i still don't think i can say no to ben and jerry's half baked fro yo, if that's ok with you.)

  7. This sounds soo good! And I can totally see how it would work. I use frozen bananas in my smoothies and it gets it so creamy. YUM! Hope you had a great weekend!

  11. Love this! It's a treat that we make in my house often. Last night, I actually "baked." For the first time in a while, and I attempted making cake batter balls, but didn't turn out so hot... They were great fresh out the freezer, but when you dipped them in the candy outside, they because way too sweet.

  19. Is this the kind of thing you could use banana bread bananas for, or should you just use nice yellow perfectly ripe ones?

  20. @Kristin, I don't think I'd use completely black/smooshy bananas, but you also don't want the bananas to have any green on them, because it will leave a bit of a green aftertaste in the ice cream. I'd go with more ripe bananas, but just not TOO ripe.

  32. I just posted something like this too! It looks like yours came out a little more dense (which was what I was going for). Hahah, and I also made a reference to Ben & Jerry's. Looks like we're on the same page this week!

    I think I might give it a try again just to see if I can achieve that thick and fluffy consistency (maybe leave it in the processor for longer). Mine was definitely more of a custard. But still yummy, so yay!
